Delicious recipe that takes a medium amount of time (not a quick weeknight dinner). The quinoa is reasy to burn when waiting for it to "pop." I think it would be better if you warm the yogurt/mango/cucumber slightly so the temperature difference between the chicken and the salsa isn't so great.
