Sweet Potato Soup

To toast pecans, preheat an oven to 325deg.F. Scatter the pecans on a baking sheet and toast, stirring occasionally, until fragrant, about 10 minutes. You can also toast them, shaking often, in a dry fry pan over medium heat for 10 minutes.

Healthy, Easy, Low Calorie meal

Made this for a soup and sandwich party of 16. It's quick, easy and low in calories. I've made this soup once a week since 11/3! My 15 year old son likes it... and that's saying something.

Great Weeknight Soup

I used this recipe initially since it doesn't use heavy cream and that is a big + for me.
I quickly found I enjoyed this soup and it was easy to make. It took me about an hour to completely make it and I paired it with a perfect salad. I liked the pecan garnish and I also added some green onions on top. Even though I like it just as the recipe has it, I might try to make it with a stronger sweet potato flavor next time.
Pros: Quick, Good Value, Easy, Healthy, Will Make Again

Amazing soup!

I decided to try this soup because my husband had bought more sweet potatoes than I could possibly eat, given that I don't particularly like them. I thought maybe the soup could hide their taste. I have to say, this soup has changed my mind entirely about this vegetable!!
The soup is absolutely delicious, and the pecans for garnish are the perfect complement. What's more, it doesn't hide the taste, it just makes it simply perfect. It's creamy but not too heavy, and the taste of the sweet potatoes is not overwhelming.
