Sweet Potato Soup

To toast pecans, preheat an oven to 325deg.F. Scatter the pecans on a baking sheet and toast, stirring occasionally, until fragrant, about 10 minutes. You can also toast them, shaking often, in a dry fry pan over medium heat for 10 minutes.

Healthy, Easy, Low Calorie meal

Made this for a soup and sandwich party of 16. It's quick, easy and low in calories. I've made this soup once a week since 11/3! My 15 year old son likes it... and that's saying something.
