Sweet Potato Hash with Poached Eggs

For the best results, use cold eggs taken directly from the refrigerator, as their whites are thicker than those of room-temperature eggs. Using a spoon, gently swirl the water around each egg as the whites set in the water.

Great Brunch Recipe
September 25, 2011
I made this for Sunday brunch and found it to be quite good. It was another easy recipe that I found I could make often. I thought, however, that it was a little dry. I added some cheese to put on top and that helped a bit. Overall, a good recipe to keep.
Pros: Quick, Good Value, Easy, Healthy, Adaptable, Will Make Again
