This was fantastic, one of the best I have ever made. Tasted like a four star restaurant. I used stale olive and onion foccacia for the stuffing . I dislike those fake miniature carrots so I used real carrots and cut them down. When I make this again I will use a lot more carrots as they cook in the juices of this amazing dish. I didn't have use want or desire pesto oil. I did add some small potatos and a sweet potato in the roasting pan for leftovers. Great recipe ! will make again and again....
