Stuffed Pork Chops with Roasted Root Vegetables

This recipe is prepared using our double-burner griddle and rack set. Thick-cut pork chops are filled with a flavorful stuffing and browned in the griddle on the stovetop. Sweet potatoes and carrots are layered on the pan and then the elevated rack is set over them to hold the chops for oven roasting.

Crowd pleaser

This is fairly simple to prepare, but is a beautiful presentation of very earthy ingredients. It can be prepared ahead of time for a dinner party, and then baked in the oven just before serving, or scaled down for an all-in-one family meal. The 10 -12 year old crowd even gave this 2 thumbs up.
For a more traditional taste, I also tried substituting sliced apples for the spinach, and this was equally appetizing. I have also tried mixing in some other root vegetables - Parsnips and Sunchokes with good result.
