Stuffed Barbecue Burgers with Beer-Cheddar Fondue

Stuffed with caramelized onions and crumbled bacon and topped with a cheesy fondue, this amazing burger is the creation of Adam Fleischman, chef/owner of Umami Burger in Los Angeles. For the ultimate meal, serve his beer tempura onion rings alongside (see related recipe at left). If you have any leftover caramelized or sauteed onions, use them for the burgers. If not, thinly slice a yellow onion, then warm 1 Tbs. olive oil in a saute pan over medium heat. Add the onion and cook, stirring occasionally, for about 20 minutes.
