Before you make this rich and creamy cheesecake, go on a shopping trip to the farmers' market. Ask the farmers if you can sample their strawberries so you can buy the best-tasting ones. Note that the cheesecake must be chilled overnight before serving.

EXCELLENT but with a few minor changes...
May 15, 2011
I followed the recipe but made three changes: 1) decrease the sugar in the filling to 1 cup instead of 1 1/4 cup, it can be too sweet, 2) make sure you bake it in a WATER BATH (fill pan about an inch and put the springform on top of it) to ensure proper heat distribution, therefore no cracking and 3) cook for 1 hr at 300deg then turn off the oven and leave it in the oven w/ the door cracked for about 1 hr then cool & chill. I made it once w/ lemon zest & lemon juice and it was very dedicate! My to-go-to cheesecake recipe w/ those modifications.
Pros: Good Value, Easy, Impressive, Will Make Again
