Quick & Easy weeknight meal

The sauce was perfect - and I love soba. I will swap out for different veggies next time like thinly sliced carrots water chestnuts or red bell peppers. Needed a little more crunch - maybe some crushed toasted peanuts on top in place of the green onion. I could easily double the meat and reduce the pasta for a higher protein diet.

So Simple and So Good

I made this last night. I doubled the recipe, but didn't double the vinegar or the sugar. It came out so good. I WILL be making this again.
