Spinach-Stuffed Turkey Meat Loaf

This rolled turkey meat loaf is a clever way of coaxing any meat-and-potatoes eater into enjoying vegetables, in this case, spinach and tomatoes. It makes a great dish for potlucks and buffet dinners. Accompany with Yukon Gold mashed potatoes (see related recipe at left).

Very very tasty!

The reviewer ahead of me was correct in saying that this recipe took quite a long time and was relatively involved to make. However, it is very very tasty.
I would have to say that my favourite bit is the orange zest at the last minute on the sauce. Perfection.
NB: It took quite a long time to simmer the sauce down to a 'paste-like consistency' so I just kept it simmering for awhile while I went on with the recipe.
Pros: Healthy, Impressive, Will Make Again
Cons: Lengthy

Good dinner

This took a little while to prepare everything, but was worth the wait. Also, most the ingredients are things always in the kitchen, so no trip to the grocery store needed.
Pros: Healthy, Will Make Again, ingredients
Cons: Lengthy
