Spinach and Feta Pancake Wraps

Created by chef Michael Symon of Lola restaurant in Cleveland, Ohio, these wraps are filled with a savory mixture of spinach, feta, Parmigiano-Reggiano and pine nuts. Serve them alongside his Lamb Chops with Lemon-Herb Yogurt (see related recipe at left).

Superb. Work, but worth it!

I made these to go with the lamb chops. Prep was more involved than I usually care to deal with, but the results were well worth the effort. The twosome was a real gourmet treat!
