Spaghettini with Summer Squash and Crispy Speck

This recipe combines the sweetness of summer squash with the smokiness of speck. It is also gorgeous to look at: strands of thin spaghettini intertwined with bright green and yellow ribbons of squash and rosy flecks of ham.

I've been making this dish for several years, learning it in a Williams-Sonoma Technique Class. It is easy and DELICIOUS! My family requests it and I've served to guests as well to rave reviews. You've got to try it. if you don't have "Speck", use proscuitto instead. It works perfectly!
Pros: Yield, Good Value, Easy, Healthy, Appearance, Adaptable, Impressive, Will Make Again
