My boyfriend and I were absolutely blown away by the sauce. We love it so much I am going to learn canning from my sister so that we can always have it on hand. We have a good Latino population here and all ingredients were easy to find at the local grocery. We did use the entire can (4 or 5 ounces?) of crushed chipotles- the chilies themselves we minced for the filling, the remaining sauce in the can we added to the enchilada sauce. It had some kick, but was so wonderful. Next time, we will try a chicken-onion-roasted bell/poblano filling. Yum!

Made this the first time when friends were coming over--it was a hit (even for my picky eater!). Used small tortillas instead of the 8" and made half with shredded chicken (leftovers from the whole grilled chicken the night before) and half just with cheese. It is impossible to have too much cheese :-) Everyone wanted to take some home for lunch the next day.
