Excellent Spin on Traditional Potato Salads

My husband and I made this for dinner and were impressed with this delicious and healthy alternative to traditional potato salad. Flavor is well balanced and light, yet satisfying. We served ours over fresh spring greens. Approximately 30 minutes to prepare and cook. Only note is to avoid over-cooking (steaming) the potatoes or green beans. Will definitely make again!

Light, refreshing and filling

This a perfect hot summer evening meal, made with readily available fresh ingredients. We substituted fingerling potatoes for the large potatoes called for in the recipe, as I really like the flavour and look of the fingerling slices.
Very tasty - our guests loved it.
