Sesame Noodles with Peanut Sauce

This simple, slightly spicy noodle dish is infinitely adaptable to whatever combination of vegetables you have on hand. Tahini, a paste made from toasted sesame seeds, is available in specialty foods stores and Middle Eastern markets. Use natural peanut butter without added sweeteners. If the oil has separated from the peanut butter, stir it in before measuring.

Quick Weeknight Meal

This is one of my husband's favorite recipes! It has the right amount of heat, hitting the back of the tongue after a few bites. This recipe was incredibly easy to make and can be adapted quite easily. While the recipe calls for shrimp, my shellfish allergic husband asked to try it with some leftover chicken and it was perfect!
