This turkey looks particularly attractive when you slip fresh sage leaves under the skin of the breast and thighs. Select 10 to 12 fresh sage leaves of similar shape and size. Before roasting the turkey, gently slide your fingers under the breast to loosen the skin and work your way down to the thigh, being careful not to tear the skin. Season the turkey under the skin with salt, pepper and a little melted butter. Then slide the sage leaves down to the thighs and up along the breast, leaving about 1 inch between each leaf. Pat the skin back in place, making sure to remove any air pockets.
