Roasted Russet Potatoes with Parsley and Garlic

Roasted potato strips are an excellent alternative to a plain baked potato and a healthful alternative to French fries. Not only do they cook faster, but they also allow you to keep the fat to a minimum by tossing the potatoes in just enough oil to give them a little flavor and encourage browning.

Better than French fries!

My health-conscious, teenaged daughters couldn't stop raving about these delicious potatoes. We LOVE good French fries, but rarely eat them because of the high saturated fat. These are baked in olive oil and have the same satisfying crunch and taste as their evil cousin. A new 5-star favorite has been added to our family cook book.
