Roasted Pork Loin with Fennel and Carrots

This recipe is simple to prepare-both the pork and vegetables roast in the same pan-yet it's impressive enough for dinner guests.

Bland - needs more flavor!

I should have paid more attention to the ingredients list. This dish is perfectly ok but a bit bland as there isn't much flavor - some other spices would kick it up. A few notes: I'd recommend using 1 large fennel bulb instead of 2 and discarding the outer parts, sticking with the smaller, thinner insides - they will carmelize more and give better flavor. Carrots and green beans don't need the same amount of time to cook. Give the carrots 15-20 min and the green beans about 10. A plus was the recommended cook temp - it will put it at medium to medium rare, which is perfect for pork.
Pros: Easy, Healthy, Adaptable
Cons: Taste, Appearance
