Roasted Mushrooms, Potatoes and Green Beans

Oven roasting at a high temperature concentrates the moisture and flavor in vegetables and requires little or no additional fat. The olive oil in this recipe is used more for its rich taste than out of necessity. The vegetables are sprinkled with Parmigiano-Reggiano cheese during the last few minutes of roasting.

Good combo but needed more

I loved the fact this had 3 things and looked beautiful after all the roasting. I blanched the green beans as it was recommended. I imagine it wouldn't be thoroughly cooked if I didn't quick cook them.15 min doesn't' seem enough I also added minced garlic (2 cloves), plus parsley flakes. Of course between the 1st part and adding gr beans, I mixed the whole batch in the flat pan. Indeed the previous commentator would be correct if I used a regular glass baking pan. I would make again.
