I don't use leeks very often and was a little worried about the taste overwhelming the dish but it so didn't! I would use maybe even a little more leek next time. Try this recipe you will love it!

You could double or triple this recipe for company. It is so simple and a one pan meal. My family loved it! Serve with a simple salad and you're done. Great yield and looks beautiful. Phenomenal!
