Risotto with Figs and Almonds

Vin Santo is a sweet, amber dessert wine that has a slightly caramel flavor laced with hints of almond and fig. It is made by drying white wine grapes, usually Malvasia or Trebbiano, and then allowing them to ferment for three or four years in small barrels before bottling. The Italians consider Vin Santo to be a meditative wine, something to sip slowly and with consideration.

Took almost a year to find the wine after looking in three states. It has a wonderful taste and texture and the figs go good with it also. It makes a lot so you might want to half it.
