Rigatoni with Goat Cheese and Vegetables

Nearly any tube-shaped pasta, such as ziti or penne, can be served with this chunky, rustic sauce. These pastas work well because their hollows trap bits of the vegetables, so each bite carries both pasta and sauce.

Yet another rave review from the grown men in our house! Both they and I absolutely loved it. Though I modified this a bit, it was very easy to make. Rather than doing the vegetables on skewers and BBQing them, I just tossed them raw into a bowl with the marinade (and let it sit for an hour) before I sauteed them as the directions called for. If you have a wok, that's perfect for this dish.
