Ricotta Tart with Cranberries

Candied orange peel is available in many specialty-food shops. To make your own, remove the peels in strips from 2 oranges. Boil the peels in water for 5 minutes, drain and rinse. Boil 1 cup sugar with 1/2 cup water and 3 Tbs. light corn syrup, stirring. Add the peel and simmer for about 1 hour. Drain and let cool slightly on a wire rack, then roll in sugar.

Simple, light and tasty dessert

Easy to make. I even made my own orange candied peel! Dessert came out perfect. Prefer if the filling came out smoother but with ricotta cheese, the grainy texture is unavoidable. Highly recommended if a light dessert is what you want.
