To slice potatoes thinly, use the slicer attachment on your food processor. Or, use a mandoline to achieve a similar result.

Great Weeknight Meal

I followed the directions for the most part, except that I did not have the Gruyere cheese. I know that this would have been even better if I had used the Gruyere instead. I also used minced garlic and my thyme wasn't fresh, so I left them in the cream sauce instead of removing them after cooking the cauliflower as the recipe stated. Some of my family is vegetarian, so we ate this as our main course with some other vegetables, but it would also be a great side dish! Not too much work for a tasty dish, so I will make it again.
