Great make ahead brunch dish

The prep work for this dish (cooking the onions and potatoes separately) take a little time, but the dish actually comes together very fast. I subbed some good white cheddar for the manchego because I didn't have that or jack on hand, and it was still good. Would recommend for a make ahead brunch.
