To test pork for doneness, insert an instant-read thermometer into the thickest part of the meat. The thermometer should register at least 145deg. to 150deg.F for medium. Note that the temperature will rise 5deg. to 10deg.F while resting.

Good, easy and quick

My husband and I really liked this recipe. I didn't have red onions, so I substituted yellow onions, and it was fine. The pork takes a lot longer to get to 165 degrees than the recipe proclaims, though. When I put it back in the pan to cook in the sauce, I cooked it a good ten minutes more.
