Pork Cutlets with Mustard Sauce

To complete the menu, saute young, tender bitter greens such as dandelion or collard greens in butter. Drizzle with a few drops of balsamic or sherry vinegar just before serving.

Yummy But Flawed
August 23, 2012
We enjoyed this recipe a lot. There is just one problem with it. If you buy 6-ounce pork cutlets, which are about 1/4-inch thick, and cook them for the 8 minutes specified, you'll have shoe leather. I used cutlets that were just over an inch thick, cooked them 3 minutes per side, and the results were good. This is a recipe I'll make again and again.
Pros: Quick, Easy, Impressive, Will Make Again

Easy and Excellent

This is a great meal especially for company. I doubled the sauce and we had a lot extra to use for later occasions. Mashed potatoes are a great side for this dish and I would highly recommend.

Quick, Easy and Elegant Comfort Food

I made this dish twice and I must say I really really enjoy it. It's a great weeknight dish where you want something a little more refined than the usual chop. I especially like how the mustard seeds add a lovely texture and pop. First time I tried it with collard greens, very nice and tonight with some simple wild rice. Very Good! I would have taken a picture but I was too hungry! Try this at least once!
