Perfect Topping for Polenta

We only made the topping for this, as I already had a roll of polenta. The sauce has a nice tart flavor - the perfect compliment to the polenta. We omitted the olives and anchovies. I cut the polenta in circles and served the sauce over it, pairing it with WS Fish with Pine Nuts and Olives and some spinach. The meal was filling and delicious!

I made this on a Sunday night in about an hour. I followed the recipe except:
- I didn't have any fresh tomatoes so I used a 15 oz. can of Eden Organic crushed tomatoes (no salt added, unpeeled). (I like Eden because they don't use BPA in their can liners - theirs is the only canned food I buy.)
- I didn't have a white onion so I used a red onion.
It turned out FANTASTIC. My husband loved it. He just kind of ate and moaned. High praise considering he is quite well-traveled and has eaten at lots of really great restaurants. I can't wait to make it again!
