Plum Tart

When baking a tart with a juicy filling, such as the plums in this recipe, place the pan on an upside-down baking sheet in the oven. This helps prevent the bottom crust from becoming soggy so it will emerge golden and flaky. A pizza stone can be used in place of a baking sheet.

Fabulous light dessert!

I have made this several times during plum season and it is gobbled up! I always serve it with a little vanilla ice cream or low fat yogurt. If the plums are tart, use a little extra sugar but other than that, it is wonderful! Be sure to use the sparkling sugar on the pastry for effect....makes it look sooo pretty. This also travels well so it is good for a pot luck supper or casual dinner with friends.
