Perfect Potato Latkes

These traditional latkes are based on a recipe from the author's mother. She chopped the onions and grated the potatoes by hand, but it's easier and faster to use a food processor, as called for in this recipe. Serve the latkes with applesauce, sour cream and sugar.

Delicious and easy - not to be missed

The only change I would make in the directions is that I shred the potatoes as the last step, after I've chopped the onion and mixed the eggs, olive oil, flour and baking powder. Doing it last helps prevent the potatoes from discoloring. This is a delicious dish that even my teenage son, who likes only a handful of dishes, is crazy about. My husband said they were of professional quality. The food processor makes it really easy to do.

Very easy and quick

This recipe is basic but tasty and easy to modify to your liking. Top with different things to suit your family. Sour cream goes great. I also used this recipe as the bottom of a frittata and it was fantastic
