Penne with Morels and Spring Vegetables

Morels, with their earthy mushroom flavor, make this spring pasta special. They grow all over the Northwest in the spring but, as with any wild mushrooms, you should refrain from picking them unless you are, or are with, an expert forager.

Simple Dinner

I used button mushrooms to make this more cost efficient. 16oz in fact, because I love mushrooms. The dish was a terrific healthy dish. The crushed pepper added a nice kick, but does require some salt and pepper. We had this with Italian bread w/ olive oil & balsamic vinegar. This gave the dish a little more flavor as well. All in all, I would make this dish again - I loved the vegetables.
