Pea and Asparagus Salad with Meyer Lemon Dressing

My husband made this for a BBQ birthday dinner for me and a big group - it was so fresh and flavorful! Definitely make sure to put the veg in an ice bath to keep it green and from over cooking. We couldn't find pea shoots, so used baby spinach, omitted the sugar and added avocado. The lemon just brought all the flavors together brilliantly. Total green tastebud explosion!
