Pasta with Tuna and Bread Crumbs (Pasta con Tonno e Briciole)

Many southern Italian pastas are topped with toasted bread crumbs, a custom that probably dates to a time when cheese was too costly for many of the locals to afford. The crumbs add a pleasing crunch and rich, toasty flavor to vegetable and fish sauces. In some recipes, the crumbs are first sauteed with olive oil and mashed anchovies for a salty tang and extra flavor.

Pros: Good Value, Easy, Healthy, Adaptable
