Pasta with Roasted Tomato Sauce

This flavorful roasted tomato sauce brings new life to traditional marinara. Storage tip: Let the roasted tomato sauce cool completely and store in airtight containers in the refrigerator for up to 3 days or in the freezer for up to 3 months. When freezing, always store in small portions (3 to 4 cups) so that you can thaw as needed.

Mild Sauce

This sauce is rather mild, not bad but not very tomato-ey.
I followed the recipe to a T - weighed out the plum tomatoes, 2 really large red peppers and I ended up with only 5 cups.
I'm leery of using 30+ plum tomatos which would be rather time consuming in seeding...
Definitely needs the 2 tbls salt. If I try this again, I'd add 4 heads of garlic and maybe a green pepper or hotter pepper to see if it adds a little zest to it.
