Pasta with Beans & Escarole

If you are unable to find escarole, you can substitute another bitter green such as mustard greens or chicory (also known as curly endive). Core and roughly chop either vegetable before cooking.

I love escarole----my family does not. This made my encounters with escarole very lonely. Then I saw this recipe and thought, Baby Boy loves bacon, Paw loves white beans and everybody loves pasta. I tried it and they loved it!! Hurray to Williams Sonoma. Hard to believe that such a healthy dish (ssh about the bacon) can taste so delicious. Try it, you will not be sorry.

This is a healthy dish that actually tastes good. It's easy to make, and tastes divine. It's one of my husband's favorites.
