Pan-Roasted Winter Vegetables

This melange of fresh vegetables combines members of the cabbage family (rutabagas and brussels sprouts) with such roots and tubers as carrots, parsnips, and yams or sweet potatoes. Although most roots and tubers are harvested in the autumn months, their long storage capability makes them favorite winter ingredients as well.

Healthy Comfort Food!

This recipe has become a favorite! It's a healthy replacement to the Mac and Cheese that I sometimes turn to for a side dish in the winter!! It also makes for a beautiful presentation with all of it's gorgeous colors!

Too long and hot

The temp and length is way too long and hot. I do roasted veggies a lot. Next time I would try 350

Perfect winter Side

This is one of my go-to recipes, especially on a cold winter day and it's so good this time of year when the winter veggies are coming on the market. I omit the butter and increase the olive oil by 1T.

This is a great option for a vegetable dish. It is great with a formal meal as well as a barbecue and is easy to prepare
