Pan-Roasted Chicken with Fennel, Leeks and Cream

Fennel has a mild licorice flavor that mellows and sweetens during cooking, and is well matched with delicate, onionlike leeks. Feathery fennel fronds are a fragrant and fitting garnish for any dish, like this one, with fennel as an ingredient. Cream draws the tastes of the fennel, leeks and chicken together and creates a rich, velvety sauce.

Easy Peasy

Have made this twice in a month due to popular demand. So easy - the chicken prep can be done in advance to save yourself time on cooking day. But do the sauce fresh before serving... I made this with Potato-Leek Gratin and Caramelized Cauliflower. Timing and temperatures all matched up pretty well.
Pros: Easy, Impressive, Will Make Again
