Delicious Potatoes for All Seasons

I have made these potatoes several times now and they have been fantastic each time. This works as a side dish on blustery winter days as well as it does as an accompaniment to steaks on the grill in the heat of summer. A simple recipe with delicious results!
These potatoes are great with Italian pancetta as well as regular American bacon. Don't scrimp on the fresh herbs, however -- they truly make this dish.
