Roasting in the oven makes this rich, creamy rice dish so easy to prepare that it requires virtually no attention, yet it develops a consistency that recalls a classic risotto. To approximate a risotto even more closely, add a fistful of freshly grated Parmesan cheese and a hefty dollop of butter just before serving.

I have made this recipe several times. I usually find brown rice boring and dry, but not this one! It is really delicious and moist. I followed the recipe exactly. I would recommend to use fresh tomatoes as called for in the recipe.

Amazing side dish to any meal

I just made the oven baked brown rice. I'm going to make it all the time now. It's a bit time consuming, but in the end it's perfect-o.
Definately worth a try making.

So easy, first time making brown rice

Flavorful with very little effort, this was my first time cooking brown rice. The end result is a very moist, slightly chewy, but soft dish. I didn't have any tomatoes, so I used canned chopped tomatoes. I can definitely see why it was described as having a risotto-like quality.
