Orzo with Feta, Basil and Shrimp

In Mediterranean cuisine, feta cheese is often paired with shrimp, the creamy, salty flavors marrying lusciously. Here, crumbled feta is added at the end of the cooking so it soaks up the warm juices from the sauteed shrimp. Instead of feta, you can try ricotta salata or a soft goat cheese. This dish makes a satisfying light meal or summer salad.

Easy AND delicious
April 23, 2013
I've made this twice now, and it is both easy and delicious. The first time I made it my husband said it was better than a lot of meals you'd get in a restaurant! I don't think it needs nearly as much orzo as it calls for. I also might kick up the marinade with a little more pepper flakes next time - we like a bit more spice.
Pros: Quick, Easy, Will Make Again
