Onion Soup

This hearty soup captures the very essence of Paris. It gained its fame as the classic middle-of-the-night restorative during the heyday of Les Halles, the city's former wholesale food market, and was served in establishments big and small in the neighborhood. Today, you can still go to the onetime market quarter and order a bowl of the cheese-topped soup at the venerable Au Pied de Cochon (1er), which continues to nourish a steady stream of nighthawks who know where to find a meal when the rest of the city is asleep.Serve with a classic bistro red wine, such as a Beaujolais from Cotes de Brouilly or Morgon.

This is my husband's favorite meal..The two of us will eat all 6 servings! The gruyere cheese is definitely a must..I've never had a better onion soup even at restaurants!

Wintertime warmness

I made this and invited my aunt over for dinner. She said that she would only have one bowl. By the end of dinner, she had 3 bowls of soup. That should tell you right there it was awesome!! And I'm a Williams-Sonoma Employee also. This is a must try.

The perfect French onion soup

I have searched for a french onion soup that turns out delicious every time, and this is it! I think the Gruyere cheese adds a fantastic saltiness to the dish.

Delicious Onion Soup

This onion soup was superb! I loved the use of light red wine, I usually use Brandy, but the wine gave it a rich flavor. I sprinkled some Parmigiano cheese on the baguette before I toasted it then I used the Gruyère cheese and broiled. My guests loved it!
