An ancient Incan grain, quinoa (pronounced KEEN-wah) is rich in protein. Other nutty grains, such as pearl barley or farro, can be substituted for the quinoa.

This soup was so delicious & really easy to make. It takes no time at all to make. My husband is really particular on flavour & this ranked extremely high in his books on all counts. I will definitely add this as a favourite to my recipe collection. Trust me you will not be disappointed!!!!
Pros: Yield, Quick, Good Value, Easy, Healthy, Appearance, Adaptable, Impressive, Will Make Again, outstanding, excellent flavour

This soup was very satisfying and easy to make. Next time, I will double the amount of carrots, celery, and quinoa, as I would prefer more vegetables/grain. The broth was excellent -- and I used a cheap old merlot I had sitting in the wine rack instead of cooking wine.
