Easy for Weeknights or Lunches

It's great! I made it on a two burner griddle instead of a panini maker, and as long as you weight it (I used a plate and a can of enchilada sauce), it will turn out great.
The arugula lends a peppery kick to the sweetness of the roasted peppers and the saltiness of the salami and prosciutto. All in all, a great sandwich.
The only part that might take a while is roasting the peppers, but I did two in the oven before making this recipe and it only took me about 30 minutes.
