Healthier Winter Stew

This recipe feels like a hearty winter stew, but is much healthier. The sweet potatoes blend right in and bring the dish together.

Great soup for leftover ham

I've been making this soup for years right after Christmas, as a way to use up leftover ham. I substitute the smoked turkey with two cups of diced ham and add it at the same time with the sweet potatoes so that it doesn't dry out. The soup is sweet and smokey and oh so satisfying. Perfect for a cold winter night. I like to drizzle a little bit of smoked olive oil when serving. Delicious!

Smokey and Delicious!

One of the reasons I like this recipe is because it introduced me to a local butcher! I love smoked turkey and so I was on the hunt to find it. Deboning the turkey was definitely some work - keep that in mind. I used green lentils because it was on hand. The aromas while simmering were so delicious! I found the cook times to be accurate. The stew itself is so amazing! The flavors do get better with time. I probably would use spinach next time instead of kale. It does make a lot. So good!!!
