Lavender-Polenta Coffee Cake (French Lavender)

Fragrant dried lavender lends delicate floral and herbal notes to the lemon-honey glaze that's brushed onto this coffee cake after baking. If you have only coarse-grind polenta, place it in a food processor and pulse several seconds until finely ground.

Pleasing texture, not too sweet
April 1, 2013
Easy to make. Processed the polenta as suggested, still leaving a pleasing texture.
The cake was sweet enough for dessert without being cloying. Next time, I think I will filter the lavender out of the cooled glaze. The flowers had a bitter after taste and we picked them off the cake. The pine nuts were a surprise addition for a dessert and complemented the polenta base.
Pros: Healthy, Will Make Again, not the usual sugary dessert
Cons: lavender flowers had bitter after taste
