Jerk Pork Tenderloin

Baked sweet potatoes are great with the jerk pork. Scrub medium sweet potatoes and pierce in a few places with a fork. Place on a baking sheet and bake in a preheated 400deg.F oven until tender, about 1 hour.

Great flavor. I marinaded it for 2 hours under vaccuum seal. It was just right. No muss, no fuss dinner. I paired it with sweet potato fries and cabernet braised red cabbage.

This tenderloin was great! The flavor is wonderful and compliments the pork very well! I will make this again and again!
