Best Corn Bread Ever

This is an amazing recipe. The jalapenos really make all the difference and add a nice zingy after taste that is not too hot if you use the amount specified; however, if you like spicy food then I would double the amount called for, something I intend to do next time. Also, I'm not a fan of cheddar cheese so I used asiago instead and it was wonderful. I don't agree with the other reviewers that it's not enough cheese or that there's something missing from the recipe--of course, I'm much more health conscious than the average American and don't eat cheese drenched food, so that's probably why. Lastly, I didn't have fresh jalapenos so I sliced ones from a jar and it didn't seem to affect the quality of the recipe at all.

I've been making cornbread for several years and have tried several different recipes. This is by far the best one yet.

Something's Missing...

The cornbread is definitely easy to prepare. It cooks nicely in the skillet, and is a nice moist consistency. However, there's just something missing. The jalapeno flavor comes through, but you can't taste any cheddar at all. I would suggest putting in at least double the amount of cheese. I also feel like maybe it should have been a little sweeter, and had actual corn kernels in it too.

I made this with some chili for a get-together, and the cornbread stole the show! Everyone wished I had made more.
I followed the recipe exactly and it turned out great, though I bet upping the cheddar quantity would give it a tangier punch.
