Father's day surprise

I made this for Father's day and my HUsband LOVED it!! I gave it a 5 star because the taste is exactly what I was hoping for, but I'll be honest, this took a LONG time to make... there are a lot of steps and if you have little ones running around like I do.. not super easy in the am. BUT definatelly a YUMMY meal!!

Delicious brunch special

Delicious and healthy! A fresh-tasting alternative to what is prepared in plenty of restaurants.
To make this a quicker recipe we used drained fire roasted tomatoes with chipotle Tabasco sauce and a little bit of salt added. We used uncooked flour tortillas and they worked very well -- we used 2 slightly larger ones than the corn variety.
The cooking time took about a minute longer for each of the two cooking steps in the cast iron. Be sure to put some oil on the cast iron if you are using a different pan to pre-cook the tortillas.
Pros: Quick, Kid-Friendly, Healthy, Adaptable, Will Make Again

Not as expected

Although it was delicious, the dish took longer than I prefer for a "quick weeknight meal." Also, my husband and I love spicy dishes, but this was too much, I will substitute for the jalapenos next time.
I do not have 2 cast iron skillets, so I substituted a 1-1/2 qt CorningWare and it worked just as well.
Pros: Yield, Appearance, Impressive
