Hickory Grill-Smoked Chicken

Grill-smoking a chicken is similar to grill-roasting it, but with the addition of wood chunks or chips to the fire and a drip pan with water to promote smoke. Choose the wood according to the degree and kind of smoky flavor desired. Hickory is the most potent, and this peppery rub is bold enough to hold its own with the aromatic wood. Serve the chicken for any occasion, with grilled vegetables for a dinner party, or with corn bread and coleslaw for a backyard picnic. See related recipes at left.

TERRIFIC CHICKEN!

I have made this chicken three times.. Once just as the recipe was written., but next time I took all the spices and made a paste with 1/2 to 3/4 of a cube of softened butter. Then I rubbed it under the skin and inside the cavity. Then took the rest and rubbed it on the outside of the chicken. Then I continued with the rest of the recipe.. It too was really good!!! The 3rd time I put the chicken in a cast iron skillet and added a16 oz. can of beer. With the paste I made with the spices. I only put 12 oz in the pan, and saved the rest so if it started to cook away I would add the rest of the beer. All 3 ways turned out GREAT !!!! I will be keeping this recipe for a very long time. My family loved all 3 versions.
