Hash Brown Frittata

A round Italian omelette made from eggs and other ingredients such as vegetables, cheese and meat, a frittata is cooked on both sides. This recipe calls for using a specially designed pan that makes it easy to turn the frittata over. The potatoes are first cooked in the deep half of the pan; pressing down on them with a spatula ensures a crispy crust. To flip the frittata over, place the shallow pan on top and invert both pans. When cooked, slide the frittata out or invert it onto a serving plate.

Perfect for Everyone

To save time, I used store bought refrigerated Simply Potatoes Shredded Hash Browns and left out the salt. I added green onions and used smaller slices of ham leftover from the holidays. I substituted parsley for Trader Joe's 21 Seasoning Salute. This recipe is easy to follow even with additions and substitutions.

Excellent for Sunday Brunch!

This dish is excellent for any meal. I have made it for Sunday Brunch and for a Weeknight Dinner. It is very easy to alter the dish, I have used Feta Cheese & Spinach Stuffed Chicken Sausage (thin sliced) and also Crisp Bacon (rough chopped). I recommend adding onion, garlic and thyme.
