Green Beans and Onions

The garlicky Greek yogurt-cucumber sauce known as tzatziki is a zesty complement to mild green beans and may also be used as a dip for pita bread or a topping for kabobs. For a thicker sauce, line a colander with a double layer of cheesecloth, and drain the yogurt for at least 3 hours or up to overnight in the refrigerator.

Great dish to usher in Spring

Wonderful side dish. I like the warmth of roasted veggetables with the cool tzatziki. My oven tends to be hot, so next time I will monitor the beans so they are not too roasted. Don't cheat and use store bought tzatziki, I did (I had it on hand) and the dill was a little too overpowering. Homemade would have been better. I can't wait to try it again though!
